Week 1: A Veggie Kinda Lent

Well, how is the vegetarian challenge going one week in?

You tell me…

This weekend, I cooked up a storm! Pumpkin Coconut Bisque, Sweet Potato and Cauliflower Mash,  as well as Quinoa Burgers, and Stuffed Peppers compliments of Sarah’s blog! In addition, tonight I made Pesto for the first time, a bit chunky, but still delish.

The last pic is of the gorgeous Syracusian Dinosaur Bbq Sauce made my quinoa burger out of this world! And its great taste comes with none of the bad stuff. Seriously, pick some up.

Lent, you ain’t seen nothing yet!
