For Lent, I gave up meat. It was much easier than I thought, missing it really only when I was starving, or it seemed ‘key’ (like dinner breakfast without bacon?)
But, I’ve loved finding new dishes to cook. My current obsession is this lunch concoction when one day I was running low of food. I’ve eaten it so much in the last few weeks and it doesn’t get old!
Kate’s Salad Obsession:
That’s organic spinach (free of pestcides), lovely grapefruit + the juice, and warm brie. Delicious!
So, will I go back to meat? Only time will tell…but right now without it, my creative juices are flowing!
